An All-In-One Chicken Sausage, Potatoes and Greens Skillet Dish


Does anyone else have a gigantic list of recipes they’ve been meaning to try and life gets in the way? Actually, I have a load of cookbooks I’ve been meaning to explore more deeply, as well.  It’s one of my New Year’s resolutions, to cook more of them.  It’s February and I’m still doing it!  Amazing, huh?

I was looking for a recipe to use with my @melissasproduce  Dutch red potatoes I purchased the other day and I found this one in a folder on my computer.  Score! It’s a great any day meal you make in one pan that you can change to your personal tastes. The original one was a little bland, so I added some garlic, herbs and spices to zhuzh it up (yes, I had to look up the spelling).

Chicken sausage comes in so many varieties, you can use your favorite and change the spices accordingly!  For this one, I used Spicy chicken Sausage with Garlic and lacinato kale. If you like things with a little less heat, try chicken sausage with apple and use spinach as the green, instead.  Whatever your taste, have fun with it….and have more time for other things because of it.


Chicken Sausage, Potato and Kale Skillet

An all-in-one dish for easy cleanup and lots of flavor!


  • 4 teaspoons extra-virgin olive oil
  • 1/2 lb Melissa's Produce baby red potatoes, cut in half
  • 3-4 links spicy chicken sausage, cut into 3/4-inch slices
  • 1 teaspoon salt, divided, plus more to taste
  • 1 small or ½ medium thinly sliced red onion
  • 3 cloves garlic, minced
  • 4 cups chopped lacinato kale
  • 1 tsp smoked paprika
  • 1 tbsp chopped fresh basil (or 1 tsp dried)
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 1/2 lemon
  • Step 1 Heat oil in a 10-inch cast-iron skillet over a medium-high, tilting pan to coat the bottom. Arrange potato wedges and sausage slices in skillet in a single layer, and sprinkle with 1/4 teaspoon salt. Cook until potatoes and sausage are beginning to brown, 3 to 4 minutes. Using a wide metal spatula, flip potatoes and sausage, and cook until potatoes are browned and tender when pierced with a fork and sausage is crisp, 3 to 4 minutes.
  • Step 2 Push potatoes and sausage to one side of the skillet. Reduce heat to medium-low. Add onion and garlic and cook, stirring occasionally, until translucent and slightly browned, 5 to 6 minutes. Using the spatula, flip potatoes and sausage on top of onion mix (to keep them from burning).
  • Step 3 Add kale to empty side of pan, and sprinkle with remaining salt and other spices. Cook, stirring occasionally, until wilted, 3 to 4 minutes. Taste and add additional salt, if desired.

  • Step 5 Arrange onions, sausage, and kale on a serving plate, and place potatoes on top of onions. Sprinkle with chopped parsley, and squeeze lemon over the top.
