Chicken with Ginger and Honey
I was always a sucker for good Chinese food. But all that salt and grease…not so much. I found a recipe on one of my kabillion food newsletters I get by Jacque Torres that used ginger and honey to give chicken some Asian flavor without adding soy sauce. Plus, the honey makes a delicious glaze! This is a wonderfully easy, super flavorful recipe. The thing that takes the most time is marinating, so prep it in the morning and go out and play!
When you get back, it only takes a few minutes to prepare. Since it already has onions and red pepper in it, you can either have it as a one dish meal or add a salad or green veggie to go with it. Personally, I think roasted broccoli would be perfect, splashed with a touch of sesame oil.
2 medium red bell peppers (cut into 1/-inch-wide strips)
½ cup honey
Directions
Step 1 In a medium bowl, combine 2 tablespoons of the olive oil with the ginger, cayenne, 1 teaspoon of salt and 1/2 teaspoon of black pepper.
Step 2 Add the chicken breasts and turn to coat with the marinade.
Step 3 Cover and refrigerate for at least 2 hours or up to 4 hours.
Step 4 In a large skillet, heat the remaining 2 tablespoons of olive oil.
Step 5 Add the chicken breasts and cook over moderately high heat until golden and nearly white throughout, about 7 minutes per side.
Step 6 Transfer the chicken to a plate.
Step 7 Add the onions and bell peppers to the skillet and cook for 3 minutes, stirring and scraping up the brown bits from the bottom of the pan.
Step 8 Reduce the heat to moderate, cover and cook for 5 minutes, stirring occasionally.
Step 9 Return the chicken to the skillet, nestling it into the onions and peppers.
Step 10 Cover and cook for 5 minutes longer.
Step 11 Uncover and add the honey.
Step 12 Cook over high heat, stirring and turning the chicken breasts, until the honey caramelizes, 1 to 2 minutes. Season with salt and pepper and serve right away.
